Low-sugar blueberry muffins
Ingredients ( Servings)
- 280 gr Flour
- 16 gr Baking powder
- 4 gr Salt
- 1.5 gr Cinnamon
- 60 gr Olive oil
- 2 units Eggs
- 380 gr Greek yoghurt (10% fat)
- 10 gr Vanilla sugar
- 133 gr Blueberries
Steps
- Preheat the oven to 200°C
- Add all the dry ingredients to a bowl and mix them. (Flour, Baking powder, Salt, Cinnamon, Vanilla sugar)
- Make a hole in the middle of the dry ingredients and add the rest of the ingredients except for the blueberries. (Olive oil, Eggs, Greek yoghurt) Mix thoroughly.
- Add the blueberries and gently mix them through the mixture.
- Divide the mixture over a buttered muffin pan. Bake for 16-20 minutes.
