Kanelboller (Cinnamon rolls)

Steps

  1. Melt 40% of the butter in a pan and add the milk. Heat to 37ªC.
  2. Add the yeast into the mixture and blend in
  3. Add the salt, 40% of the sugar, cardamom, 50% of the eggs, most of the flour. Knead till a smooth and loose dough.
  4. For the filling: In a separate bowl, mix the rest of the butter, sugar and the cinnamon together.
  5. Separate the dough into sheets of about 20 x 45 cm. (2 sheets for 24 pieces, 1 for 12 pieces) Smear out the filling onto the sheets.
  6. Roll up the sheets and cut into buns of about 2cm wide.
  7. Put the buns on a sheet of baking paper and let them rise for about 30 minutes.
  8. Set the oven to 250ªC
  9. Right before baking brush the top of the buns with the rest of the (whisked) egg and sprinkle with a bit of sugar.
  10. Bake for about 7-8 minutes.
