Kanelboller (Cinnamon rolls)
Ingredients ( pieces)
- 350 gr Butter
- 500 ml Milk (3,5%)
- 20 gr Yeast (dried)
- 3 gr Salt
- 260 gr Sugar
- 2 Piece Egg
- 825 gr Flour
- 4 gr Cardamom
- 24 gr Ground cinnamon
Steps
- Melt 40% of the butter in a pan and add the milk. Heat to 37ªC.
- Add the yeast into the mixture and blend in
- Add the salt, 40% of the sugar, cardamom, 50% of the eggs, most of the flour. Knead till a smooth and loose dough.
- For the filling: In a separate bowl, mix the rest of the butter, sugar and the cinnamon together.
- Separate the dough into sheets of about 20 x 45 cm. (2 sheets for 24 pieces, 1 for 12 pieces) Smear out the filling onto the sheets.
- Roll up the sheets and cut into buns of about 2cm wide.
- Put the buns on a sheet of baking paper and let them rise for about 30 minutes.
- Set the oven to 250ªC
- Right before baking brush the top of the buns with the rest of the (whisked) egg and sprinkle with a bit of sugar.
- Bake for about 7-8 minutes.
