Pasta with smoked salmon, goat cheese and spinach
Ingredients ( people)
- 250 gr Spinach
- Olive oil
- 1 clove Garlic
- Pepper
- 150 gr Ricotta
- Salt
- 400 gr Spaghetti
- 1 piece Onion
- 250 gr Smoked salmon
- 1 handful Pine nuts
- 250 gr Goat cheese
Steps
- Boil water with a bit of salt
- Clean the spinach
- Heat a bit of olive oil in a pan and cook 3/4ths of the spinach
- Peal the garlic and cut ti finely. Add the pulp to the spinach and season with pepper and salt.
- Add the cookedstewed spinach to a blender or cutter with a bit of water. Add the ricotta and goat cheese. Blend until smooth.
- Boil the spaghetti in the water
- Heat some olive oil in a pan
- Peal the onion and cut it into strips. Cook it in the oil
- Add the pine nuts and let it roast for a moment
- Add the pasta to the onions and pine pits.
- Add the sauce to the spaghetti together with a bit of the spaghetti water. Add the rest of the spinach leaves. Mix everything.
- Rip the salmon into pieces. Add to the pasta when serving.
