Shakshuka
Ingredients ( people)
- 2 tablespoon Olive oil
- 1 piece Onion (diced)
- 1 piece Red bell pepper (seeded, diced)
- 4 cloves Garlic (finely chopped)
- 1 teaspoon Ground cumin
- 2 teaspoon Paprika powder
- 0.25 teaspoon Chili powder
- 800 gr Whole peeled tomatos
- 6 pieces Eggs
- Salt and pepper (to taste)
- 1 bunch Parsley (chopped)
- 1 bunch Cilantro (chopped)
Steps
- Heat the olive oil in a large pan on medium heat. Add the chopped onion and bell pepper. Cook for 5 minutes or until the onion becomes translucent.
- Add the garlic, cumin, paprika powder and chili powder.
- Add the can of tomatoes and break them apart. Season with salt and pepper.
- Bring the sauce to a simmer.
- Make wells into the sauce and crack the eggs into them.
- Cover the pan and cook until the eggs are done (5-8 minutes).
- Garnish with parsley and cilantro.
